Abstract
Conference abstract presenting findings on the application of a bacteriocin-producing mesophilic *Lactococcus* starter culture to suppress *Listeria monocytogenes* in traditional Moroccan lben. Findings demonstrated complete elimination of the pathogen within 24 hours of fermentation.
